Banana Bread with Goji Berries February 28, 2020December 11, 2014 by Peter O'Connell Sugar Free, Mixed seed Banana Bread with Goji Berries: Making this bread is much easier than getting your mouth around the title! 200g of buckwheat flour 1 tsp of baking powder (gluten free) 4 overripe bananas 50g of mixed seeds such as hemp, sunflower, Goji berries- as many as you wish to add Cinnamon Coconut oil to grease the baking tin 100ml of non dairy milk such as unsweetended almond milk 50ml of water- add more if batter is too thick Method: Pre-heat your oven to gas mark 6/ 210 C In a large bowl mix all of your dry ingredients excluding berries and seeds Place in your food processor and add in your banana in chunks, add your liquid and blitz until well mixed Add your goji berries and seeds and give it one more blitz Grease your baking tin with the coconut oil Pour the mixture in and set into your oven for 1 hour- checking occasionally That is it! Once your bread is ready, enjoy with some nut butter. Each tasty mouthful provides you with a great source of protein and fibre! Enjoy
