Courgettes are in season between June and October, so you still have time to enjoy the goodness that courgettes have to offer:
Courgettes are a good source of B vitamins, folate, magnesium, calcium, copper, phosphorus, zinc and omega 3 fats, but are especially rich in:
Vitamin K; essential for blood coagulation, aiding wound healing, and bone health by keeping calcium in the bones and out of the arteries; thus lowering the risk of osteoporosis and heart disease.
Vitamin C; an antioxidant preventing cell damage (faster aging) by free radicals and is a vital part of collagen for healthy skin, bone and teeth formation. Reducing the risk of cancer, osteoarthritis and heart disease.
Potassium; is an electrolyte along with sodium, calcium, magnesium and chloride. It maintains muscle contraction and electrical impulse transmission making it crucial for heart function.
Lutein and Zeaxanthin are phytonutriants rich in carotinoids, a source of vitamin A, promoting healthy eye sight and reducing the risk of age-related macular degeneration.
Fibre, promotes a healthy digestive tract and bowel movements reducing risk of diabetes and cholesterol.
